Pumpkin soup – Ideal for lose weight

What we need?

  • 1 pumpkin (not very big, middle size)
  • 2 tablespoons olive oil
  • 2 tablespoons coconut oil
  • 1 chopped onion
  • 2 cloves garlic
  • 2 tablespoons chopped ginger
  • 1 teaspoon cumin
  • ½ teaspoon coriander
  • 3 cups chicken soup ( is better to make it homemade)

How to prepare?

First cut the pumpkin into two pieces and season with salt and pepper. On every half put 1 tablespoon olive oil and bake in preheated oven on 200 C degrees (392 F) for about 35 minutes. Pumpkin should become very soft. While pumpkin is baking, simmer well garlic and onion in coconut oil; then add ginger and all other spices. Simmer everything together for few minutes so the taste of every ingredient can be mixed and then add the chicken soup. If you need more salt, season to your taste. Leave to boil while pumpkin is baking.

Once the pumpkin is ready, put it in the pot of chicken soup and leave to boil for another 10 minutes.

At the end, put it in blender to get delicious creamy soup for lose weight. The color is orange, served with little olive oil on the top and parsley. So, if you want, you can also add little sour cream.
