When nitrates are on high temperature exposure, they turn into nitrosamines, which are in fact carcinogenic.
Nitrates are connected to many diseases such as non-Hodkin lymphoma, leukemia, and different cancers, including colon, ovarian, bladder, pancreatic, stomach, and esophageal cancer.
