Perfect Winter Starter- Potato Cream Soup! Simply Yummy!

We recommend you to try another recipe which will warm you up these days – Healthy Potato Cream Soup! It’s perfect winter starter for those who want to combine vegetable in a soup and who want to try something different as starter. If you don’t feel very hungry, this is perfect main dish for you.

Potato Cream Soup

Ingredients for Potato Cream Soup for 6-8 persons:

  • potatoes (17.5 ounces)
  • 1 large onion
  • 2 carrots (medium size)
  • Leek (bright part) (4.2 ounces)
  • water (if it’s not enough you’ll add 100 ml more)
  • 4 teaspoons instant vegetable soup (or 2 soup cubes )
  • cooking cream
  • melted cheese (7 ounces)
  • Olive oil
  • Salt and pepper

Preparation:

First clean, wash well and chop all vegetable necessary for the Potato Cream Soup. In a bigger and deep pot put a little olive oil and add the onion, carrot and leek to fry for few minutes. Once leek is nicely soften, add potatoes so they can fry slightly.

Pour with water, let to boil for few minutes and then add instant soup or soup cubes. Reduce temperature to medium and simmer the vegetables to boil around 15 minutes or until you notice that potatoes and carrots are soft enough.

Remove from heat and mix nicely with hand blender. Put it back on medium heat, add sour cream (this is optional but it gives really nice taste!) and leave to boil with occasional mixing. If you think soup is too creamy, add little more water.

Once it’s done, add melted cheese inside. Stir until you get nice homogeneous mixture. Finally, add salt and pepper.

Serve it nice plate and decorate with parsley. On the top you can put few bread cubes if you consider this meal as main dish.

Simple recipe that you’ll make for 30 minutes but you will enjoy infinitely.
