Beet Soup for fast and easy weight loss – Great choice for lunch starter or late dinner!

Beet Soup

Calories: 37 per 1/2 cup

Ingredients for Beet Soup:

  • 1 teaspoon olive oil
  • 1 cup chopped onion
  • 2 cups water
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 medium beets, peeled and halved
  • 1 medium potato, peeled and halved crosswise
  • 1 bay leaf
  • full teaspoon lemon juice
  • 8 teaspoons reduced-fat sour cream
  • 4 cups fat-free, less-sodium chicken broth (optional)

Preparation:

Very simple! Heat the oil in a oven over medium-high heat. Add onion; sauté 3 minutes or until soft and  tender. Add broth (if you want!) and next 6 ingredients from the list (through bay leaf). Bring to boil. Then reduce heat and simmer for 20 minutes uncovered. Discard bay leaf.

Place one-third broth mixture in food processor or blender and mix until smooth. Place mixture in a large bowl. Repeat procedure twice with remaining mixture. Return pureed mixture to pan. Then warm soup over low heat for 5- minutes or until thoroughly heated. At the end, remove it from heat and stir in lemon juice.

Combine half cup soup and the sour cream, stirring with a whisk.

Put on each serving 1 tablespoon sour cream mixture and enjoy in the meal!
