Start the Week with Detox Vegetarian Sour Soup! Simply Delicious

Detox Vegetarian Sour Soup is perfect meal for those who want to clean the organism. It’s one of detox soups that you will simply feel good about eating and also you will enjoy the way it tastes. When preparing this Detox Vegetarian soup, use mushrooms known for their detoxing value, like reishi or shiitake. They are great replacement for meat and they give hot and sour flavor to the soup. The apple cider vinegar gives this soup its sour quality and in same time provides your body helpful digestive flora. You will simply get the good dose of detoxing goodness.

Ingredients for Vegetarian Sour Soup:

Detox Vegetarian hot and Sour Soup recipe

  • 1 oz. dried and mixed mushrooms
  • 3 tablespoons sherry cooking wine
  • 8 cups water
  • 1/4 cup apple cider vinegar
  • 1-1/2 teaspoons kosher salt
  • 1 tablespoon grated ginger
  • 2 tablespoons soy sauce
  • 1 pound extra firm tofu, cut into 1/2 inch cubes
  • 2 tablespoons cornstarch
  • 2 eggs, lightly beaten (optional)
  • 6 scallions, trimmed
  • 1/4 teaspoon white pepper
  • Sesame oil (if you can find pure) , for serving


Place the dried mushrooms (we use Shitake) in a bowl and cover with 2 cups of boiling water. Cover and allow to sit for at least half an hour. While mushrooms are cooking, you have time to prepare the other ingredients.
Remove mushrooms from the hot water and keep the liquid for later (for soup preparation). Thinly slice the mushrooms.

Combine the remaining water in a soup pot together with the sliced mushrooms and reserved liquid from the mushrooms. Bring to boil over medium-high heat. Add the sherry, vinegar, salt, ginger soy sauce and tofu. Then reduce the heat and allow simmering uncovered for about 10-12 minutes.

In a small bowl, put the cornstarch with little of the hot broth from the soup pot until cornstarch is dissolved. Then pour the mixture back into the soup pot, stirring to distribute. The soup should thicken slightly. While stirring constantly, (if you decided to put eggs) drizzle the eggs into the hot soup. Add white pepper and scallions. Cook for another minute or two.

Serve the detox vegetarian sour soup hot with a little bit pure sesame oil on top.
