We can hear and see lately that the Chia seeds are involved more and more in all kind of dishes. I use it almost in every dish (raw in salads, fried in main dishes usually for lunch, boiled in soups etc) .The reason of course is familiar: these tiny seeds are simply full of health! We can say that they are considered to be one of the healthiest foods on the earth! Did you know that Chia seeds contain 10 times more omega-3 than salmon, 9 times more antioxidants than oranges, 4 times more iron than spinach, 5 times more calcium than whole milk, 15 times more magnesium than broccoli, etc.
You can now prepare various delicious dishes, drinks, jams from these seeds. Today I chose to present you very simple but tasty and healthy dessert – Chia seed pudding!
Ingredients for 2 persons:
- coconut milk (you can also use soy milk, rice milk, almond milk …)
- 3 tablespoons Chia seeds
- 2 tablespoons honey (or agave syrup, or brown sugar- but for me honey is the best combination)
- 1-2 strawberries (or other fruit that you have at home – this is for decoration)
- 1 tablespoon chopped hazelnuts
How to prepare Chia seed pudding?
Pour the milk in a bowl. Add Chia seeds and honey (or sweetener of your choice). Mix slowly so the honey can nicely melt (do this on medium heat), close well the bowl with a lid or foil and place in fridge. The best to prepare this pudding is in the evening so you can leave the seeds overnight to swell and to “let out” all nutrients. The next day, stir the mixture and place it in dessert cups. Place chopped fruit on the top of dessert if desired and sprinkle with chopped hazelnuts. You can also put little dark chocolate on the top; it will attract kids’ attention.
